Chorizo is a typical salami from the Mediterranean region, strong and a little spicy, spiced with capsicum.
This type of salami is great as a little snack with an aperitif but it goes perfectly well with vegetables in a stew too, because of its unique flavors.
The weight of the salami is based on its maturity: between 140 and 180 grams.

Note on noble mold
The mold coating is typical of the handmade sausages from Auvergne. Depending on the degree of maturity of the sausage, it is more or less strong, because the noble mold arises naturally during maturation and gives the sausage its incomparable taste. The natural mold coating can be eaten without restriction - but if you wish, you can also lightly brush the salami dry.
