Our air-dried ham with pepper is characterized by its harmonious balance between the tenderness of the ham and the spicy spice of the pepper. This ham, carefully made from pork shoulder, is seasoned with finely ground pepper, which gives it a distinctive aroma.

Note on noble mold
The mold coating is typical of the handmade sausages from Auvergne. Depending on the degree of maturity of the sausage, it is more or less strong, because the noble mold arises naturally during maturation and gives the sausage its incomparable taste. The natural mold coating can be eaten without restriction - but if you wish, you can also lightly brush the salami dry.
